Summer Vegetable Stir-Fry with Quinoa

Ingredients:

•   1 cup of quinoa

•   2 cups of water

•   1 tablespoon of olive oil

•   1 red onion, chopped

•   1 red bell pepper, chopped

•   1 yellow bell pepper, chopped

•   2 cloves of garlic, minced

•   1 zucchini, sliced

•   1 yellow squash, sliced

•   1 cup of cherry tomatoes, halved

•   Salt and pepper to taste

•   Fresh basil for garnish

 

Directions:

1.      Rinse the quinoa in a fine mesh strainer and add it to a pot with 2 cups of water. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until the water is absorbed and the quinoa is tender.

2.      While the quinoa is cooking, heat the olive oil in a large pan over medium-high heat. Add the onion and bell peppers and cook for 3-4 minutes until they start to soften.

3.      Add the garlic, zucchini, and yellow squash to the pan and cook for another 3-4 minutes until they are tender.

4.      Add the cherry tomatoes to the pan and cook for 1-2 minutes until they are heated through.

5.      Season the vegetables with salt and pepper to taste and divide the quinoa into bowls and top with the vegetable stir-fry. Garnish with fresh basil and enjoy!
