Spot of Summer Popsicles featuring Piña Colada Happy & Skinny

It might feel counterintuitive to make popsicles in the middle of winter, but sometimes you need a spot of summer to brighten your day—and what better way to do that than with Piña Colada Happy & Skinny?

 

Ingredients:

•   1 14 oz can of coconut milk

•   4 cups of pineapple chunks

•   2 Tablespoons of honey

•   1/4 cup of shredded coconut

•   1 sachet of Piña Colada Happy & Skinny

 

Directions:

1.      In a medium sauce pan, heat coconut milk and honey together over medium heat until the coconut milk solids are melted and the mixture is fully incorporated.

2.      Add the pineapple chunks and Piña Colada Happy & Skinny sachet to a blender and pour the milk mixture over them. Blend until well mixed.

3.      Add the shredded coconut and stir with a spoon to incorporate.

4.      Pour the mixture into popsicle molds and freeze for at least 6-8 hours.

5.      Enjoy!
