No-Bake Breakfast Cookies

Serves 8 - 245 Calories Per Serving

Cookies? For breakfast? It sounds scandalous, but these healthy protein-packed cookies are a great way to start your day—and they are perfect for when you are on the move!

 

Ingredients:

•   3/4 cup of creamy peanut butter

•   2-4 Tablespoons of honey

•   1 teaspoon of vanilla extract

•   3 Tablespoons of chia seeds

•   3/4 cup of old fashioned oats

 

Directions:

1.      Put the peanut butter, honey, and vanilla in a microwavable bowl and microwave the ingredients for 20 seconds. Stir until well combined.

2.      Add in the chia seeds and old fashioned oats and stir until everything is evenly incorporated. If the mixture is too runny, add more oats. If it is too dry, add more honey and/or peanut butter.

3.      Roll the mixture into 8 balls and place the balls on a baking tray lined with parchment paper. Flatten the balls slightly and place the tray in the fridge or freezer until set.

4.      Enjoy!
