Israeli Couscous with Cherries

Looking for a simple and delicious meal? Then look no further than this dish that pairs savory elements with the tartness of cherries and is sure to be crowd pleaser!

 

Ingredients:

•   1 Tbsp extra virgin olive oil

•   1 medium red onion, chopped

•   1 cup Israeli couscous

•   1 1/2 cups water

•   1/2 tsp salt

•   8 oz cherries, halved and pitted (frozen is fine if fresh are not available)

•   1/4 cup parsley, chopped

•   1/4 cup scallions, chopped

•   1/2 cup feta, crumbled

•   2 Tbsp white wine vinegar

•   Pepper and additional salt to taste

 

Directions:

1.      Heat the olive oil in a pan over medium heat. Add the red onion and sauté until softened.

2.      Add the Israeli couscous to the pan and let it cook for about 4 minutes.

3.      Add the water and salt and bring the contents of the pan to a simmer. Cover and reduce heat to low for 8 minutes.

4.      Remove the pan from the heat and toss with the cherries, feta, parsley, scallions, and white wine vinegar. Add salt and pepper to taste.

5.      Serve and enjoy!
