Makes 20 Cookies - 88 Calories Per Serving

It’s Girl Scout cookie season and although the temptation is great, try this keto-friendly alternative instead!

 

Ingredients:

•   1 1/3 cups almond flour

•   1/3 cup cocoa powder

•   1/3 cup keto-friendly sugar alternative, such as Swerve

•   1 tsp baking powder

•   1/4 tsp salt

•   1 large egg, slightly beaten

•   2 Tbsp butter, melted

•   1/2 tsp vanilla extract

•   1 Tbsp coconut oil

•   7 oz dark chocolate

•   1 tsp peppermint extract

 

Directions:

1.      To make the cookies, begin by preheating the oven to 300ºF and line two baking sheets with parchment paper.

2.      In a large bowl, mix the almond flour, cocoa powder, sweetener, baking powder, and salt. Then add in the egg, butter, and vanilla extract until just combined.

3.      Roll out the dough between two pieces of parchment paper to your desired thickness (but not more than 1/4” thick). Remove the top piece of parchment paper and set aside.

4.      Using a 2” cookie cutter, cut out cookies and set them on the prepared baking sheets. Bake cookies until firm to the touch, about 20-30 minutes. Remove from the oven and allow to cool.

5.      While the cookies are cooling, begin preparing the chocolate coating. Begin by melting the chocolate and coconut oil in a double boiler (or in a bowl over a pot of boiling water), stirring until smooth. Remove the bowl from the heat and stir in the peppermint extract.

6.      Dip the cookies into the chocolate, using tongs or two forks to turn the cookie so that it is fully coated. Set the covered cookie on a wax paper lined baking sheet.

7.      One you’ve covered all of the cookies, refrigerate them until they are fully set.
