Keto Chocolate Chip Cookies

Just because you prefer a keto diet does not mean you have to miss out on all the holiday goodies. Bake enough cookies for Santa with a few leftover for you (or maybe Santa can make his own cookies, these are delicious and you might not want to share).

 

Ingredients

  • 2 large eggs

  • 8 Tbsp of melted butter

  • 2 Tbsp of heavy cream

  • 2 tsp of pure vanilla extract

  • 2 3/4 cups of almond flour

  • 1/4 tsp of kosher salt

  • 1/4 cup of keto-friendly granulated sugar (Swerve is a popular choice)

  • 3/4 cup of dark chocolate chips

 

Directions

  1. Preheat the oven to 350ºF.

  2. In a large bowl, mix the eggs with the butter, heavy cream, and vanilla and set aside. In a medium bowl, combine the almond flour, salt, and keto-friendly sugar. Add the dark chocolate chips to the bowl with the dry ingredients, making sure the chips are coated to prevent clumping in the batter.

  3. Slowly add the dry ingredients to the wet, stirring until combined.

  4. Form the cookie dough into 1 inch balls and arrange them 3 inches apart on a greased baking sheet.

  5. Bake for about 18 minutes or until cookies are golden brown.
