Keto Mac & Cheese

Is there anything better than comfort food on a cold day? You don’t have to answer that, because we already know the answer: there is not. Check out this keto variation of a classic comfort dish!

 

Ingredients:

  • 2 medium heads cauliflower, cut into florets

  • 2 Tbsp extra-virgin olive oil

  • 1 cup heavy cream 

  • 6 oz cream cheese, cut into cubes

  • 4 cups shredded cheddar cheese

  • 2 cups shredded mozzarella cheese

  • 1 Tbsp hot sauce (optional)

  • 1/4 cup parmesan cheese

  • Salt and pepper to taste

 

Directions:

1. Preheat the oven to 375ºF and lightly grease a 9”x12” baking dish. Set the dish aside.

2. In a large bowl, toss the cauliflower with the olive oil and season it with salt. Spread the cauliflower out evenly on two large baking sheets and roast until tender and lightly golden (about 40 minutes).

3. While the cauliflower roasts, heat the cream in a large pot over medium heat. Bring the cream to a simmer and then decrease to low heat and stir in the cheeses until melted. Remove the pot from the heat and season with salt and pepper. Add the hot sauce now if you so choose.

4. Fold the cauliflower into the cheese mixture and transfer everything to the prepared baking dish. Sprinkle the dish evenly with the parmesan cheese and bake until golden, about 15 minutes. If desired, you can turn the oven to broil for about 2 minutes to crisp the top.
